15 Minute Spaghetti Squash Meal

Who doesn’t love a quick and easy meal?  I know I do!  And this one is a win win because its pretty darn healthy too!  This was a request from Instagram, if you have any requests feel free to leave them in the comments or message me on any social media.

Lemon Parm Spaghetti Squash with Chicken

1 large or 2 small chicken breasts, split and pounded thin
1 smallish spaghetti squash
1/2 lemon
Olive Oil
Parmesan Cheese
Salt, Pepper, Garlic Powder & Onion Powder
Parsley Garnish

Pierce spaghetti squash with sharp knife
Place squash in the microwave for 10-15 minutes depending on the size
Season chicken with SPGO
Cook in a pan with olive oil or grill (whatever you prefer)
Remove Squash and slice in half (careful its hot!)
Remove seeds with a spoon
Use a fork to fluff the meat of the squash
Season with olive oil & SPGO, mix well
Add Lemon Zest and Lemon Juice
Add Parmesan Cheese (how much is up to you, I love parm so I put lots)
Mix well
Slice chicken

Plate up the squash topped with chicken and garnish with some parsley.
ENJOY!
