Lemon Parmesan Zucchini

Sometimes the hardest thing about cooking is coming up with some different sides for those basic chicken and pork dishes or days where the grill is the main event.  I’ve been lucky enough to get fresh zucchini from a friends garden so I decided to show you an easy way to prepare it!

Ingredients-
1 large or 2 small zucchinis, cut in half and then sliced
1 large sweet onion, cut in half and then sliced
3 cloves of garlic, grated into the dish
1 lemon
1/4 cup of parmesan cheese
Salt and Pepper
1-2 tbsp Olive Oil

Slice zucchini and onions, peel garlic and cut lemon in half
Over medium/high heat, heat up olive oil and when hot throw in zucchini
After zucchini are about half way cooked add the onions and the garlic
Season with salt and pepper
Add the lemon juice to the pan, toss around and let cook for another minute
Add the parmesan cheese, toss and move to a platter!

Time for a Cook Out

Burgers, Potato Salad and Corn on a grill!  Those things are what makes summer, well, summer!  With Memorial Day being the kick off to summer we wanted to start it off with a bang!  And this had us dreaming about more.  Below I’m just going to list out the ingredients, watch the video for directions (otherwise it will be the longest post in HISTORY)

Burgers-
1.5 lbs ground beef
1/4 cup of sliced scallions
salt, pepper, garlic, onion
Worcestershire sauce

Potato Salad-
6 large red potatoes chopped and boiled
3 slices of bacon, chopped and rendered
1/2 cup aioli (see below)
3 oz softened cream cheese
1/4 cup sour cream
1/4 cup parmesan cheese
1/4 cup monterey jack cheese (or cheddar, whatevs)
1/4 diced onion, grated garlic
3/4 bunch of scallion (divided)

Aioli-
1 cup of mayonnaise
lemon juice
cayenne pepper
salt, pepper, garlic and onion
1/4 cup sliced scallions
1/2 tsp dijon mustard

Mayo-
2 eggs
9-16 oz canola oil (until thickened)
lemon juice
salt, pepper, cayenne
1/2 tsp dijon mustard

Corn (from Taste of Home)-
4 ears of corn
4 slices of bacon
cajun seasoning
4 pieces of foil

Fake Out Chicken Cordon Bleu

I’m not a huge fan of breading, I know that’s crazy to a lot of people, but there is something about it that I just don’t like.  However I love a lot of dishes that involve breading so I’ve created fake out recipes that have all the flavor without the breading.

Fake Out Chicken Cordon Bleu

4 chicken breasts (or 2 large split in half)
4 slices of swiss cheese (or whatever slices you have on hand, we had provolone)
4 thin slices of deli ham
1 tbsp butter
1 tbsp olive oil
1 ½ tbsp. flour
¾ cup of chicken stock
½-¾ cup of milk
1/8 tsp cayenne
salt, pepper, garlic powder and onion powder (spgo)

Cut, if necessary, the chicken and season it with the spgo
Heat a large skillet up and add a little olive oil and add the chicken
cook until half way done (covering if necessary) then flip

While that is cooking in a small pan add the butter and oil
once melted whisk in the flour and let cook for about a minute
add the chicken stock whisk until thickened
whisk in the milk, once thickened add the seasonings
Keep heat on low and keep covered until ready to use.
(If you want to add extra cheese to the sauce wait until just before you are ready to use the sauce, just whisk in the cheese until melted and you’re done!)

Once the chicken is just about done, add a slice of ham to the top of each piece
cover to heat the ham through
add a piece of cheese to the top of each piece of ham
cover to allow the cheese to melt

Carefully remove with tongs and top with a little bit of sauce and serve with your favorite veggies and starch!  (We went with broccoli/cauliflower and added a little extra sauce to that too! Yum!)

Birthday Weekend!

This weekend my 29th birthday came and went and it was probably one of the best birthday’s I’ve had!  (Definitely top 5).  It wasn’t anything crazy or special it was just a lovely weekend.

Saturday I relaxed and got depressed after watching the Castle Season Finale! (Ugh, did you watch it, what did you think?)  After that figured I should do something productive, I decided to donate some blood.  (I tried to vlog while I was there but they asked me not to…)  Then it was just some filming and editing before heading off to dinner at Red Robin so I could have a delicious burger!  The weather was perfect and I just couldn’t have asked for a better day.  I got so many birthday wishes from everyone!  You guys are truly amazing!

Sunday was such a fun day!  Nick and I went down to Boston to do some window shopping and well, some actual shopping.  Let’s be honest, I can’t go down to Boston and manage to come home with nothing!  Thanks to Matt, Nikki, Zoey & Zachary I was able to get a couple things from Sephora.  Plus we went looking around for a new camera.  Unfortunately we came up empty handed on that front.

Lunch at the Cheesecake Factory was delish.  I was a little worried about walking into a place without doing research to see if they had an allergy menu, but I have to say our server was great.  I checked their website when we sat down to get their allergen menu (they didn’t have a paper copy), and ordered what I wanted.  The server actually came back to tell me that the bun I had ordered had sesame seeds in it so he put in the order with one that I could have.  Overall it was a great experience and we were able to walk around the rest of the day without me having a stomach ache!  Success!

The rest of the evening was relaxing.  When I got home I found the camera I wanted on Amazon, and I should be getting it next week!  I can’t wait.  This week should be the last week of poor quality videos!  (Depending on when it gets here obviously)  I have the next 4 videos set so I’m hoping after those 4 we will be into the new camera!  I also got a set of softbox lights so that no matter what I have good lighting!  Thanks to my Mom and Dad, Marc and Sue, Aunt Lolly and of course Nick, for the birthday gift!  Without you guys I wouldn’t have been able to get it!  So excited for those to come in the mail!

YouTube, Blogs and Vlogs… Oh My!

For starters, I decided to do a April Selfie Challenge, where I took a picture of myself every morning to see how I changed over the month and see all the different makeup I did.  May is Make faces May, so at the end of the month stay tuned for that video.  Here is Aprils!

My Allergy Free Pad Thai

Hi guys!  I hope everyone had a great week.  I was on spring break so mine was quite nice!  For starters I want to wish a Happy Anniversary to my Parents!  33 years together and still going strong (even surviving a home remodel!)

On another note, since the food allergy diagnosis Nick and I have been missing one dish in particular.  Pad Thai.  We had been going out for Thai food at least once a month.  Although I had been known to make Pad Thai at home on occasion.  Unfortunately being allergic to peanut, sesame and soy pretty much takes every ingredient out of Pad Thai… (and well a lot of Asian cuisine in general)  And in being allergic to almonds it makes substitution even more difficult.
