Chipotle Southwest Slaw

A delicious slightly spicy slaw, can be used on top of tacos, sandwiches, or just as a side dish.

1/2 head of cabbage, thinly sliced
1/2 carrot, shredded (1 carrot if its small)
1 mini cucumber, shredded or finely sliced
2 bunch of scallions, chopped
1/2 avocado, thinly sliced
Juice of 1/2 a lime
2-4 tbsp Baja Chipotle Marinade (from Lawry)
salt and pepper to taste
1 tbsp sugar (optional)
1 tbsp sour cream or ranch dressing (optional)

Add all ingredients into a bowl and mix together.  Let sit for about 15 mins, stir again, and then serve!

If it is a little too spicy for you, add some sugar, it will cut down the spiciness.

If you prefer it too be a little creamier, add a little sour cream or ranch dressing.

Super simple and delicious!
