Fake Out Chicken Cordon Bleu

I’m not a huge fan of breading, I know that’s crazy to a lot of people, but there is something about it that I just don’t like.  However I love a lot of dishes that involve breading so I’ve created fake out recipes that have all the flavor without the breading.

Fake Out Chicken Cordon Bleu

4 chicken breasts (or 2 large split in half)
4 slices of swiss cheese (or whatever slices you have on hand, we had provolone)
4 thin slices of deli ham
1 tbsp butter
1 tbsp olive oil
1 ½ tbsp. flour
¾ cup of chicken stock
½-¾ cup of milk
1/8 tsp cayenne
salt, pepper, garlic powder and onion powder (spgo)

Cut, if necessary, the chicken and season it with the spgo
Heat a large skillet up and add a little olive oil and add the chicken
cook until half way done (covering if necessary) then flip

While that is cooking in a small pan add the butter and oil
once melted whisk in the flour and let cook for about a minute
add the chicken stock whisk until thickened
whisk in the milk, once thickened add the seasonings
Keep heat on low and keep covered until ready to use.
(If you want to add extra cheese to the sauce wait until just before you are ready to use the sauce, just whisk in the cheese until melted and you’re done!)

Once the chicken is just about done, add a slice of ham to the top of each piece
cover to heat the ham through
add a piece of cheese to the top of each piece of ham
cover to allow the cheese to melt

Carefully remove with tongs and top with a little bit of sauce and serve with your favorite veggies and starch!  (We went with broccoli/cauliflower and added a little extra sauce to that too! Yum!)
