Lemon Parmesan Zucchini

Sometimes the hardest thing about cooking is coming up with some different sides for those basic chicken and pork dishes or days where the grill is the main event.  I’ve been lucky enough to get fresh zucchini from a friends garden so I decided to show you an easy way to prepare it!

1 large or 2 small zucchinis, cut in half and then sliced
1 large sweet onion, cut in half and then sliced
3 cloves of garlic, grated into the dish
1 lemon
1/4 cup of parmesan cheese
Salt and Pepper
1-2 tbsp Olive Oil

Slice zucchini and onions, peel garlic and cut lemon in half
Over medium/high heat, heat up olive oil and when hot throw in zucchini
After zucchini are about half way cooked add the onions and the garlic
Season with salt and pepper
Add the lemon juice to the pan, toss around and let cook for another minute
Add the parmesan cheese, toss and move to a platter!
