Meat Free Fridays!

Well its that time of year again where eating meat on Friday’s is a ridiculous no-no.  (Don’t even get me started on the tradition that people have changed to their convenience…  that’s neither here nor there)  Although I disagree with this tradition because of the reasoning behind it, I do thing having a meatless day can be a good idea.

It can force you to try new things or re-experience things you haven’t had in years.  Last Friday we made home made pizza, half caramelized onions and mushrooms, half cheese with home made pizza sauce.  YUM!  It was delicious.  I cheated by using store bought pizza dough (it was a spur of the moment oh yeah I need dough!)  But it turned out great!

Pizza Sauce Recipe
1 large can crushed tomatoes
1 tbsp hot sauce (I used pacific garlic hot sauce, but regular would be fine too)
2 tbsp pizza seasoning (generic, whatever you’ve got)
1/2 tbsp garlic powder
1/2 tbsp onion powder

Simmer until hot. Ladle 1 cup or more if you really like lots of sauce, top with cheese and toppings.  Bake until golden brown and bubbly!

Today for lunch I decided to have something I haven’t had in ages!  Egg Salad Sandwich.  Years ago I realized I hated normal egg salad and I wasn’t sure why until I realized I’m not a fan of mayonnaise  until it is freshly made from scratch (which is not so healthy or so realistic to make for just 1 sandwich).  So I decided to try other options, everything from bleu cheese dressing, ranch dressing, sour cream, etc.  This is what I settled on.

Egg Salad
2 large boiled eggs (whole)
1 large boiled egg (white only)
2-3 tbsp plain Greek yogurt (or light sour cream)
small sprinkle of onion powder, garlic powder, cayenne pepper and parsley
season with pepper and generous salt to taste
garnish with scallions.

Use a fork and mash up the eggs
Add the rest of the ingredients and mix well.  (if you prefer a wetter egg salad use more yogurt, dryer use just enough to bring it together)  Taste and enjoy on toasted bread
