Spaghetti Squash Shrimp Scampi

I wrote this today specifically for my brother and sister in law.  They are eating healthy and trying to expand their horizons at the same time.

1 spaghetti squash, whole
2-3 large garlic cloves, minced
1/2 cup chicken or vegetable broth
zest and juice from 1 lemon
handful of fresh parsley, chopped
1-2 tbsp olive oil
12 oz peeled deveined shrimp

First things first, you have to cook the spaghetti squash, the easiest way to do this, is to puncture it all over with a paring knife.  Make sure to pierce it through to the center, and be very careful!

Place the squash WHOLE in the microwave on top of a shallow dish or bowl and microwave for 12 mins, turning the squash over at the 6 minute mark.

Remove from oven and let cool while you cook the rest of the dish.

In a medium or large saute pan heat the oil over medium heat.  Add the garlic and the shrimp, just before the shrimp is cooked add in the rest of the ingredients. (except the parsley) and cook down until slightly thickened

While this is thickening cut the squash in half lengh wise.  Scoop out the seeds with a spoon or ice cream scoop (they will come out rather easily).  And then take a fork to the flesh of the squash, scraping to review spaghetti like “noodles”.

Simply add the “noodles” and parsley to the sauce and shrimp, toss lightly and serve.  (optional, top with a small sprinkling of fresh grated parmesan cheese)

This dish is full of good for you fats, lots of protein and an entire serving of vegetables! (serves two very large portions)
