Teriyaki Chicken Kabob w/ Sesame Ginger Slaw

Teriyaki Chicken Kabobs

-1 lb chicken meat, cubed (I use tenders cause it means less cutting, but breasts work too)
-½ large pineapple, sliced into thin chunks
-1 onion, cut into chunks
-8 skewers, soaked for at least an hour in water
-2 Tbsp teriyaki marinade, I used Lawry’s, its my favorite, but whatever you prefer

-marinade the cut chicken in the marinade for a minimum of 30 mins (I strive for an hour)
-Once done, skewer all ingredients alternating, until all 8 sticks are full.
-Grill for 5 mins per side (20 mins total)
-Serve hot!
Sesame Ginger Slaw

-½ head of cabbage, shredded
-2 small carrots or 1 large carrot, shredded
-2 scallions, thinly sliced
-1 can bean sprouts, rinsed and drained
-2-4 Tbsp sesame ginger marinade, again, I use Lawry’s
-½ tsp powdered ginger
-1 lime, zested and juiced
-pepper (to taste)

Mix all together, chill for about a half hour, serve.
